Veggie Basmati Tomato Rice


  • Brown Basmati Rice
  • Half a Tomato
  • Half a Red Pepper
  • One – Two Cups of Sweetcorn
  • Organic Virgin Coconut Oil
  • Pinch of Chopped Garlic
  • Rapeseed Oil
  • Salt herbs
  • Four – Five Eggs
  • 2 cup of Hemp Seeds
  1. Boil 2-3 cups of rice for around 25 minutes whilst you prepare the rest of the meal.
  2. Chop up the tomato and red pepper
  3. Place the sweetcorn in a pan to boil for 5-7 mins and drain
  4. Place a teaspoon of coconut oil into a pan and when its melted pour in the garlic with the tomato and red pepper
  5. Whisk the four eggs and hemp all in a bowl
  6. Drain the rice and mix it into the pan with tomato, peppers and garlic.
  7. Pour the whisked eggs and hemp into the pan slowly cooking it all on a low heat and stirring it around.
  8. Add the pre boiled sweetcorn in to the mix.
  9. Add a dash of rapeseed oil and a sprinkle of the salted herbs
