Vege Cinnamon Rice


  • 2 Cinnamon Sticks
  • Two Cups of Basmati Rice
  • Two Cups of Spinach
  • One Clove of Garlic
  • 3 Large Carrots
  • Two Small Spring Onions
  • Coconut Oil
  • Sea Salt
  1. For every cup of rice, add two cups of water in the pan and boil. Basmati rice usually takes 25-30 minutes to cook so this is the first thing to do.
  2. Add both Cinnamon sticks in to boiled water with the rice. Maybe cracking them in half. Constantly stir every now and again during its boil time so the rice catches onto the flavour of the cinnamon.
  3. While the rice is cooking, skin the carrots then chop them up along with the spring onions.
  4. Get a pan/wok and place a tsp of coconut oil. Heat the pan to gas 5-7.
  5. When the coconut oil has melted, drop the spring onions and carrot in to bronze.
  6. After 5 minutes add all the spinach and stir, while turning down the heat for a slow cook.
  7. After it has cooked, find a sieve and drain the rice rinsing it over with water.
  8. Slice and dice the garlic into very small pieces.
  9. Add the rice and garlic into the pan with a second tsp of coconut oil.
  10. Stir in sprinkling some sea salt.
  11. Turn off the stove and carry on stirring.
  12. Finally serve it into a bowl of your choice, whether you have this as a main meal or as a side next to a protein of your choice, the flavours will be enough to make the meal!
